The dining experience at Le Salbuen Café Market in Montclair just keeps getting sweeter. Literally.

In their never-ending quest to supply local diners with tasty, inventive dishes created from fresh, locally sourced ingredients–the owners of Le Salbuen have become beekeepers.

Earlier this year, the talented (and frankly adorable) husband and wife team of John and Christina Salierno purchased several thousand bees from the award-winning local honey farmers: Bee Bold Apiaries.

“We love to lie in the backyard hammock at home and watch them working–flying out of the yard and coming back to the hive,” says Christina.

But don’t the busy bees sometimes get in their way? “They fly so high they never bother us–or our Chihuahuas,” laughs John.

The couple recently harvested 50 pounds of honey from their own hives, and are putting it to good use. They use “the nectar of the gods” in their signature French toast, braise turkey in it for their shepherd pie, and bake the golden sweetness into their brioche bread pudding (recently named “dish of the week” by NJ.com.) And they’re selling their all natural, organic honey by the jar, under their own “Le Salbuen” label.

But hurry, the buzz is that it’s selling out fast.

  1. 28thfish, what’s your problem? If everyone planted just 3 flowers in their front yard instead of pesticide-ridden lawns, the bees won’t be threatened by extinction. And just to remind you, we need the bees to pollinate half of the crops that we (including YOU) need to eat. So drop your little hipster road rage and be grateful that there are still people out there who care about the environment. The bees are one of the most awesome species out there and everyone who cares for them deserves respect.

    Salbuen, now I love you even more!
